Transforming the kitchen beneath one of London’s most iconic restaurants, Simpson’s in the Strand

A prestigious London restaurant, Simpson’s in the Strand required an outdated basement kitchen transformed. HCE took on from SHW at design phase, to install a fully functioning commercial kitchen that improved workflow and operational efficiency.

Simpson’s in the Strand is an historical venue situated on the edge of Covent Garden, London. Incorporating 2 restaurants, 2 bars, and a large function space for up to 110 seated guests, it is a 22,000 sq. ft site that is steeped in history. After being mothballed since covid, the venue required a significant revamp both front and back of house before a planned reopening by Jeremy King Restaurants.

Speaking on this £1 million kitchen refurbishment, Alex Pitchford – Project Manager for Jeremy King Restaurants – explains that the aim was to “make the spaces work in a way that would allow us to operate most efficiently. However, we were very aware of the challenges of it being an historic space. The kitchens dated back nearly 100 years and the way they were laid out and designed is very different to what we want today. Selecting the right people and the right equipment for the project was therefore crucial, which is why we employed the likes of PSE Associates to project manage and SHW to create the initial designs”.

Craig Burley, Project manager at PSE Associates, explains “We have worked with Jeremy King Restaurants on many projects and we’ve had a strong relationship with SHW, the designers, for many years. When it came to appointing a contractor with the specialist commercial kitchen knowledge we needed, their recommendation of HCE had a lot of weight. Once we started to develop the design with them it was instantly proved that they were the right people”.

“With the facility being 200 years old and having gone through a number of major refurbishments, it needed care”, says Julian Shine, Business Development Director, HCE.

“We received a very good stage 3 design from Sefton Hall Winch, and on top of this we created the services, schedules, made sure that the flow patterns and the equipment selected would work within the building etc”. After acquiring the final design from SHW and an agreement on the costings, “HCE then moved on to fabricating the stainless-steel equipment, ordering the specialist equipment then the installation phase and the handover and commissioning phase”, states Craig Burley.

HCE were the sole entity working on the project, which to Alex was “incredibly important” to have a “single point of contact throughout”. As he says, “it comes back to building a relationship”.

Chef David Stevens equally praised the project. “What was really important when we were setting up the revamped Simpson’s in the Strand was workflow. This will become a very busy operation, so it was important that whatever supplier or kit that we brought into the building, it was multifaceted.” All the bulk prep happens in the subbasement kitchen, so we were pleased about “the fact that we can now incorporate everything and we have line of sight right through the kitchen means we can see all the chefs working. In our current climate we make it as easy as possible for them as we don’t want to introduce unnecessary pressure. Likewise, we try and use as much modern kit as we possibly can”.

Equipment within the kitchen included a FlexiChef with an automatic cleaning system, and a 20-grid oven which can dry roast, convection, steam, and be used as a water bath. This allows chefs to “work in numbers” and “free up space in the kitchen where the chefs can actually work on”.

But it was not just the equipment HCE could supply, but also the knowledge, guidance and expertise that was valuable. “One area that was a little bit unknown to us was the catering of our events space… something we had to lean on HCE in terms of expertise… but with the help of Julian and the HCE team we found a way and I think the results stand for themselves”, explains Alex.

Chef David states, “HCE were with us all the way… we made it very clear what we were looking for, and I believe 100% that’s what they’ve given us. Every chef loves a nice shiny new kitchen and I have exactly that”.

HCE is looking forward to continuing this relationship through working with Simpsons on the servicing and maintenance of the space. As Alex states, “history tells you that you can buy the best kit in the world but if you don’t look after it and maintain it then in a very short space of time you are going to be in trouble. We made the decision it is much better to work with the people who know the kit”.
